These nutritious yogurt and oat waffles are a delightful way to start your day. Drizzle with the white chocolate sauce and they transform into dessert!
Melt the butter and set aside. In a large bowl, whisk together flours, oats, baking powder, baking soda and allspice. In another bowl, whisk together the milk, yogurt, honey, eggs and vanilla until smooth. Pour the liquid ingredients over the dry ingredients and whisk until just combined. Gently fold in the melted butter. Let the batter rest for 10 minutes.
Preheat oven to 200°F (100°C). Place a cooling rack over a baking sheet and place the oven. Preheat and lightly grease the waffle iron. When the waffle iron ishot, pour batter into the wells of the waffle iron (fill according to themanufacturer’s instructions). Close the lid and bake until the waffle is goldenand set. Carefully remove waffle from iron. Keep waffles warm as you make therest by placing them on the rack in the oven, which will allow the waffles tokeep crisp.
For the white chocolate sauce
Finely chop the white chocolate, place in amicrowavable measuring cup and pour the cream over. Microwave for 2 minutes onmedium-low heat, stopping and stirring thoroughly every 30 seconds to melt thechocolate and make sure it doesn’t burn. BE VERY CAREFUL as white chocolate isvery sensitive to heat. When the chocolate is melted and well incorporated tothe cream, stir in the Grand Marnier or Cointreau, if desired.
SERVING: Serve the waffles warm with fresh fruits, a generous drizzle of white chocolate sauce and a sprinkle of sliced toasted almonds.
MAKE-AHEAD & FREEZING TIPS: Cook all the waffles, then let them cool over a wire rack. Once cool, spread over a baking sheet and place in the freezer. Once the waffles are fully frozen, transfer to a heavy-duty freezer bag. The waffles will keep frozen for up to 1 month.To warm up frozen waffles in a toaster: Bring frozen waffles back to room temperature for 15 minutes. Slide frozen waffles directly in a toaster and toast until just warm and crisp. Some toasters have a "frozen" option that warm-ups at a lower heat, then toasts, which allows you to skip over the thawing step.You can also warm up frozen waffles in the oven: Preheat the oven to 300°F (150°C). Set the waffles side-by-side on a baking sheet lined with parchment paper. Transfer to the oven for 10 minutes, then serve.
