If the batter still breaks off in chunks, keep folding. If it pours off the spatula like pancake batter, you’ve gone too far. This is definitely one of those techniques that gets easier with practice and patience!

September always pulls me back into planning mode. Summer content is winding down, apples and squash are taking over my notes, and I’m in holiday mode weeks before people even start thinking about Halloween. The cooking is obviously the fun part, but this quieter side of the work is what turns a pile of ideas into an actual recipe calendar 💁🏼‍♀️
