Welcome to my Cooking with Friends series! This spring, as I work on cookbook projects that keep me very busy, I’ve invited some of my favorite blogger friends to share recipes with you. I hope you’ll have just as much fun cooking and baking with them as I do.

Today, I’m welcoming  Samantha from  My Kitchen Love. Samantha is a fabulous mom of three who’s a master at creating simple, delicious, and healthy meals. Today, she is sharing her Sweet Potato Taco Bowl. Enjoy!


Tacos are one addictive dish. Having fully entrenched myself in the taco trend, there’s little I won’t do to get a version of a taco on the table at least a few times per month. When taco meets healthy Buddha Bowl I will find a way to get it on the family table in less than 30 minutes and with flavours my kids can’t resist.

Here a humble sweet potato is transformed into a crowd-pleasing taco bowl. That’s the thing about herbs and spices; they take a ho-hum dish to wowza pretty quickly. Bright, crisp vegetables and a touch of ground beef round out the meal making it perfect for little ones. Multiple options for iron between the sweet potatoes, beef and beans, and lots of veggies make everyone happy.

Sweet potatoes have been a huge struggle for me. My kids do not enjoy sweet potatoes, carrots, or even squash. Finding ways to get them on board with Vitamin A is like pulling teeth from a wolverine. Okay, maybe a slight exaggeration, but I have had to come up with recipes like this one to please their tiny tastes buds into thinking sweet potatoes are the yummiest thing yet. In truth, it’s really the combination of flavours here that work. Building each bite with ingredients that work well together.

Customization is key in this recipe. Drop each ingredient in a separate bowl on the table and allow everyone to fill up their own bowl with what suits them the best. Vegetarian? Skip the beef and load up on the beans. Can’t image life without avocados? Pile on the avo or even guacamole on top. Don’t like tomatoes? Swap it for another vegetable that works with your preferences. The recipe is a suggestion for what works for us; always switch it up to make it taste the best for you and yours. May your tacos always be delicious!
