Juicy strawberries, zingy lime, fragrant mint, rum, and bubbles: this fresh strawberry mojito recipe is summer in a glass! A quick strawberry puree gives it gorgeous color and bright berry flavor—perfect by the glass, as a pitcher, or made virgin.

Instructions
For the strawberry puree: Add the strawberries, mint, and sugar to a blender. Blend until very smooth. (You can also use a stick blender or a mini food processor to puree the strawberries.)
Strain the puree and discard the seeds and bigger bits of mint. Refrigerate in a jar or an airtight container for up to 1 week. You will have more puree than you need for 1 cocktail: freeze the remaining puree in an ice cube tray to portion it out for future strawberry mojito cocktails.
To make the strawberry mojito cocktail: To a shaker, add the lime juice and mint leaves. Using a muddler or a wooden spoon, crush the mint leaves to release their flavor into the lime juice. Add the fresh strawberry puree, rum, and simple syrup, then add 4 or 5 ice cubes. Shake vigorously, then strain into a tall glass. Add 3 or 4 ice cubes, then top off with club soda or sparkling water.
Garnish with a fresh strawberry, if desired, and enjoy immediately.
Notes
How to make simple syrup: In a small saucepan, combine ½ cup (100 g) granulated sugar with ½ cup (125 ml) water. Bring to a simmer to fully melt the sugar into the water. Remove from the heat, transfer to an airtight jar, and let cool completely. Refrigerate for up to 2 weeks.
To make it virgin: Skip the rum and add an extra splash of club soda or sparkling water. For a sweeter mocktail, use sparkling lemonade.
To make a pitcher: Multiply the ingredients by the number of servings you need. Muddle the mint and lime juice in the pitcher, stir in the puree, rum, and simple syrup, then add ice and club soda right before serving.
