Over the years, I have gathered tons of food magazines—literally. A couple of years ago, as my family and I were clearing out the house in anticipation of a move—who wants to carry around hundreds of pounds of old magazines?—I started leafing through lots of issues, one by one, tearing off interesting articles or recipes to try. Doing so required patience, Netflix in the background, and an occasional glass of wine, but relieving myself from the weight of all those magazines made me feel SO MUCH BETTER.
The recipes I tore off went into a binder, and when I lack dinnertime inspiration, I go back to it and flip through to try a new recipe. Many such recipes have earned a spot in my family’s list of favorite dishes. Sometimes, the binder has inspired me to create recipes that became my own.
One of my favorite magazines 10 years ago was Real Simple—and though I loved my Real Simple magazine collection, it was also the one I just couldn’t wait to get rid of. The pile was huge because I was a subscriber for many years and also because each issue was always super thick. I loved Real Simple especially for the recipe section, which was filled with no-nonsense dishes. I often used the magazine’s simple recipes as a starting point to elaborate my own variations.
After trying one of Real Simple’s no-fuss recipes, I was inspired to create this Mexican chicken soup. This heart-warming, spicy soup is infused with salsa verde, and it couldn’t be simpler to make. Simply combine the 4 ingredients in a pot, simmer for 10 minutes, and you’re done. Dinner on the table in record time.
But what I like most about this Mexican Chicken Soup recipe is that it’s super versatile. You can add veggies to it—my favorite additions are corn and avocado—and garnish it with a ton of toppings to make it feel fancier. It’s a hearty soup that’s a close cousin to chili, so anything you’d serve with chili works here: tortillas, sour cream, grated cheese, green onion, fresh coriander, and so on.
