Lentil Stew with Ham and Greens

A casserole reminiscent of Northern Europe that’s delicious accompanied with fresh bread and a glass of Riesling.

Lentil Stew with Ham and Greens

Serves 6.

Ingredients
1½ tbsp [22.5 ml] olive oil
1 cup [250 ml] chopped onion
3 garlic cloves, minced
5 cups [1.25 L] fat-free, less-sodium chicken broth
1 cup [250 ml] dried lentils
½ cup [125 ml] chopped carrot
2 bay leaves
3 cups [750 ml] chopped Swiss chard or spinach
1½ cups [375 ml] chopped baking potato
1 cup [250 ml] chopped smoked ham
1 14.5-ounce [429 ml] can diced tomatoes
½ tsp [2.5 ml] dried thyme
½ tsp [2.5 ml] black pepper
3 tbsp [15 ml] chopped fresh basil

Method

Heat oil in a Dutch oven over medium-high heat. Add onion and garlic, sauté 5 minutes. Add broth, lentils, carrot, and bay leaves and bring to a boil. Partially cover, reduce heat and simmer 20 minutes. Add Swiss chard (or spinach), potato and ham. Bring to a boil, reduce heat and simmer 15 minutes or until potato is tender. Stir in tomatoes, thyme, and pepper and simmer again for 10 minutes. Discard bay leaves. Serve each portion sprinkled with fresh basil.

  • I love your blog! Love everything about it! I made your pistachio macarons last weekend and all 30 are gone. Delicious! I love your images too!

I also bought the Bread Machine book you recommended and I made the sour cream rye on Saturday when we had friends over for a late Saint Patrick’s Day reuben. It was so yummy!

Is the bread on this shot from that book? It looks so delicious I’d love to try!

Thanks for sharing your wonderful recipes and images!

    • You make me want to make a batch of macarons right away! It’s been a while… I think I have to make some this weekend :)
I’m happy your bread turned out great! No I didn’t make the bread that’s on the picture, it’s a pesto baguette from a local bakery, but I figure it must be pretty easy to do. Prepare basic baguette dough, spread it with pesto and cheese, twist it then bake it! I’m sure it would be delicious, I have to try it!

  • Made. With lamb instead of ham. Awesome freezer dish for a single person. I love having food like this, everything in one, makes lunches so easy. Plus it helps that it’s pretty tasty as well. Thanks for the recipe :) .

    • Lamb in this recipe is a wonderful idea! I’ll remember this and try it next time. I totally agree that this makes a great and healthy lunch – I always have some in the freezer for a last-minute meal!
