Who here loves zucchini? Growing up, I hardly found any good qualities to that green squash. Raw, I found it bland: Who needs zucchini when you can have crunchy, juicy, and refreshing cucumbers, instead? (Yeah, I didn’t know much about food back then.) Cooked, I thought it was mushy, still bland, and all-around unappealing.

It was only when I learned who to cook it right (briefly, over high heat, so it remains crunchy) and found out how versatile it was that I began to fall in love with it. Shaved thin, it’s a great addition to salads (or it becomes a salad in itself). Pureed, it makes deliciously velvety soups. Sauteed, it instantly adds vitamins to stir-fries and curries. Grilled, it makes the quickest side dish there is. Baked, it can replace pasta in casseroles. Grated, it can go into desserts. Veggies slipped into desserts! My 14-year-old carrot-cake-loving self would have been delighted by that idea.

Now, I know about a thousand ways to prepare zucchini. The latest craze? Spiraled and used as a pasta substitute—probably the easiest way to go gluten-free. Whether you feel adventurous or you’re looking for new ways to fall in love with the veggie, I gathered delicious and creative recipes that will help you get through that zucchini pile. Don’t forget to save some to use in this winter’s soups and stews (yes, you can freeze it, too!). In the heart of winter, I guarantee you’ll be happy to see your old friend again.
