These photogenic maple meringues are the result of me wondering what to do with so many leftover egg whites. I had recently made several batches of éclairs to create my How-To post, and I usually don’t mind having egg whites leftover because they become the perfect excuse to whip up a Lemon Meringue Pie (one of my favorite desserts), or a new batch of macarons, when I feel more ambitious. This time though, I wanted to try something different, so I decided to use it to make candy. I always thought meringues were super cute, but I had never made them myself. Being that I’m such a maple syrup lover, of course, I just had to make maple meringues, so I flavored them with maple syrup and sprinkled them with maple sugar. The resulting maple meringues are super crisp, but they melt and become sticky in the mouth, like honeycomb does. They’re an irresistible treat and they’re so photogenic too! Maple meringues make a great hostess gift, but they would make perfect wedding or shower favors too.
